Manual harvest, vatting of whole bunches for Carbonic Maceration, which is carried out with selected yeasts at a temperature of 23º for a week. Next, we tread the grapes and press. The broth obtained has to complete the alcoholic and malolactic fermentation. Finally, a gentle stabilization prepares the wine for bottling.
